There are several variations for pumpkin cookies, such as using cream cheese frosting, but I love the maple because it adds that classic, old fashioned taste.  These cookies are going to remind you of the kinds of cookies that grandma used to make…

Pumpkin Cookie Recipe:

½ cup softened butter
1½ cups packed brown sugar
1 tsp vanilla
2 eggs
½ cup pureed pumpkin
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
2½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda

 

Maple Frosting Recipe:

2¼ cup confectioners’ sugar
1 teaspoon maple flavor
3 tablespoons milk
1 tablespoon melted butter

Instructions
Pumpkin Cookie Recipe
  1. Preheat oven to 375 degrees.
  2. In a large bowl, mix brown sugar, butter and vanilla with electric mixer.
  3. Add in pureed pumpkin and eggs.
  4. Add cinnamon, ginger, cloves, salt, and baking soda.
  5. Sift flour and mix in slowly.
  6. Line baking sheet with parchment paper.
  7. Use cookie scoop to drop onto cookie sheet.
  8. Bake 8-10 minutes.
  9. Allow to cool completely before frosting.
Maple Frosting Recipe
  1. In a separate bowl, mix powdered sugar, maple flavor, milk and melted butter.
