Pumpkin Cookie Recipe:
½ cup softened butter
1½ cups packed brown sugar
1 tsp vanilla
2 eggs
½ cup pureed pumpkin
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
2½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
Maple Frosting Recipe:
2¼ cup confectioners’ sugar
1 teaspoon maple flavor
3 tablespoons milk
1 tablespoon melted butter
While these are not classic Christmas cookies, add a few Christmas sprinkles, and you might just have a new favorite Christmas cookie too! You could also use vanilla extract in the frosting instead of maple flavor for a more neutral flavor and color.
