Cake mix cookies are some of my favorite cookies because, not only are they quick and easy, but they are delicious! And you can take any flavor of cake mix that you want and turn it into a cookie recipe. This recipe for lemon cake mix cookies is good, but we kick it up a notch, with a lemon glaze, and topped with lemon zest!
One of the reasons that I love making cake mix cookies is because, like a pouch of cookie mix, it is really simple to make. I really like regular cookies, but it seems that using the cake mix yields a more cake-like cookie… and to me, that gives them a homemade, old-fashioned taste!
These lemon cake mix cookies are good on their own, so you really don’t have to do anything else, however, I really like to bring out the lemon flavor with a drizzled lemon glaze on top. You can get fancy and put the glaze in a piping bag (or make your own by cutting the corner off of a sandwich bag), however, I just dip a fork into the glaze and drizzle the glaze over the cookies by hand.
Lemon cake mix cookie recipe
- 1 box lemon cake mix
- 2 eggs
- 1/2 cup oil (canola oil or vegetable oil)
Mix all ingredients together. Drop onto cookie sheet lined with parchment paper. Bake for approximately 10 minutes at 350 degrees.
Lemon glaze recipe
- 1 cup confectioners sugar
- 2-4 Tbsp. milk
- lemon juice to taste
Wait until the cookies are cool, then drizzle with the glaze. If you put it on while the cookies are warm, much of the glaze will melt and run off.
