There is nothing better than freshly baked, warm bread. And these chocolate chip and banana muffins are so sweet, moist, and delicious, you won’t be able to eat just one!
I love this recipe because it is homemade and it is so easy to make! Sometimes, it seems really intimidating to bake from scratch, but it doesn’t have to.
I started making these when my youngest son kept asking for “Little Bites” to take to school every day for snack. Depending on where we bought these, it would cost $2.50-4.99 per box. Each box had five packs of mini muffins, with about five muffins per bag. So for the $2.50-4.99, we were only getting 25 mini muffins. I can make this recipe for about $1.25! It fills a 24 mini muffin tin and makes 3-5 regular muffins as well.
Chocolate Chip & Banana Muffins
- 1 egg (large or extra large)
- ½ c. vegetable oil
- ½ tsp vanilla
- 1 c. sugar
- 1 c. bananas, mashed (about 2 bananas)
- 1½ c. flour, sifted
- ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ¼ c. mini chocolate chips
Cream together egg, oil, vanilla, and sugar in large bowl with mashed bananas. Sift together dry ingredients. Add the dry ingredients to the creamed mixture and blend. Add the mini chocolate chips. Use a one-inch cookie scoop to scoop into mini muffin tin. Bake at 350 degrees for 10 minutes, or until golden brown. If you are using regular muffin cups, bakes for 12 minutes or until golden brown.
*Baking tip* Make sure to grease each individual muffin cup if you are putting batter directly in the tin.
