Summer is nearly half over, and before we know it, the kids will be heading back to school.  Of course, we all realize how busy things are during the school year, but with three boys that are busy most of the summer finishing up spring sports, and then starting fall sports, our summers don’t really slow down that much.  I am always looking for a quick, easy, and healthy snack (or meal) that I can make for the kids.  So I was pretty excited to be able to pick up several varieties of Eckrich Deli Meat at Walmart on my last trip.

Having Eckrich Deli Meat on hand is a staple in our home.  Of course, they make it easy to put a delicious sandwich together, but these deli meats can be used for so much more!  Whether I’m looking for a quick and easy snack, lunch, or even a party appetizer, I turn to deli meat and veggie kabobs.

 

Quick & Easy Deli Meat & Veggie Kabobs // Money Savvy Living

 

All of the same great flavors that you get in a deli meat sandwich, but without the bread— so it’s a great option if you’re on a low-carb diet or need to eat gluten free!

Create these Quick & Easy Deli Meat & Veggie Kabobs:

  1. Cut each of the slices of Eckrich Deli Meat until it’s about 1.5 inches wideQuick & Easy Deli Meat & Veggie Kabobs // Money Savvy Living
  2. Wash cherry tomatoes, keep whole.Quick & Easy Deli Meat & Veggie Kabobs // Money Savvy Living
  3. Peel and slice cucumber, then cut cucumber slices in half.Quick & Easy Deli Meat & Veggie Kabobs // Money Savvy Living
  4. Make cheese cubes (if you don’t have block cheese, just use cheese sticks)Quick & Easy Deli Meat & Veggie Kabobs // Money Savvy Living
  5. Make sriracha mayonnaise.  It’s so easy!  Just mix sriracha sauce into the mayonnaise to taste (add a couple of drops at a time because it’s pretty spicy!)Quick & Easy Deli Meat & Veggie Kabobs // Money Savvy Living
  6. Roll deli meal slices and layer on the skewers, alternating tomatoes, cucumbers, and cheese cubes between deli meat slices.Quick & Easy Deli Meat & Veggie Kabobs // Money Savvy Living

Ingredients List:

  • Eckrich Ham Off the Bone
  • Eckrich Pickle & Pimento Loaf
  • Eckrich Hard Salami
  • Cherry Tomatoes
  • Cucumber Slices
  • Cheese Cubes *optional
  • Sriracha Mayonnaise *optional
  1. Cut each of the slices of Eckrich Deli Meat until it’s about 1.5 inches wide
